What is
Kinari cuisine?
It is not cuisine that does nothing.
It is cuisine that knows where to stop.
To add less,
judge more carefully.
Fish changes by moisture, fat, texture and season. Vegetables change in aroma and bitterness. Dashi changes with temperature. Because ingredients are never exactly the same, our work cannot be exactly the same. We intervene only as much as necessary, then stop.
DASHI
Dashi is not the protagonist.
Natural ma-kombu, honkarebushi and water form the base. The purpose is not to make the dashi louder, but to bring the main ingredient forward.
FISH
Aging is not the goal.
If time helps, we give it time. If the fish is best now, we use it now. We judge the fish, not the number of days.
FIRE & WATER
Water builds the base.
Fire defines the outline.
